Easy Egg Salad Recipe

Who doesn’t love a great egg salad sandwich? It’s perfect for any occasion; lunch box, potluck, picnic, buffet or get together. You name it! That’s why I’ve decided to share with you today my Easy Egg Salad Recipe. It’s quick to prepare, and makes the best finger sandwiches every!

Easy Egg Salad Recipe

Pair this Easy Egg Salad Recipe with whole grain bread for a delicious healthy meal. You will have tasty sandwiches filled with protein and whole grain.

To prepare this recipe you will need:

Ingredients

6 large eggs boiled and peeled (How to cook the perfect hard-boiled eggs)
2 tablespoons of mayonnaise
1 green onion finely chopped
1 tablespoon of sweet relish (optional but gives it a sweet tangy taste)
Salt and pepper to taste

Easy Egg Salad Recipe

Instructions

In a medium bowl, mash the eggs with a potato masher.
Add the rest of the ingredients and mix together.
I like to refrigerate my egg salad for 30 minutes before making my sandwiches, but this is just a personal preference.

Serve on bread, croissants, buns or in a wrap.
You can also add salad leaves, spinach and cheese.
