A friend of mine gave me this amazing Eclair Cake recipe a long time ago (over 15 years). I had not made this recipe in so long, but it’s so easy, that I remembered it by heart. You should have seen my kids, and my husband, when I gave them a piece of this delicious dessert; big eyes and most of all, big smiles.
Ingredients
- 1 container of cool whip (1L)
- 4 already made vanilla pudding
- 125 g of cream cheese (at room temperature)
- 1 pack of graham wafers
- 4 squares of pure semi-sweet chocolate (bakers)
- 1 square of white chocolate (bakers)
Instructions
- Cover the bottom of a 9"x13" dish with graham wafers, break them if necessary.
- With a mixer, mix together half the whipped cream with the cream cheese, and spread over layer of graham wafers.
- Add another layer of graham wafers on top of the whipped cream mixture.
- With a mixer, mix together the rest of the whipped cream with the vanilla poudding, and spread over the graham wafers.
- Add another layer of graham wafers on top of the whipped cream mixture.
- In the microwave, melt the chocolate.
- Cover the graham wafers with the semi-sweet chocolate first, and then spread the white chocolate on top.
- Refrigerate for at least 6 hours (even better if you refrigerate overnight).
This is the perfect dessert to make when you’re having people over for dinner. It makes enough for everyone, it’s really easy to make and your guest will love it. They will think you spent hours making it!

I’m not a dessert person. I’m the kind of person that rather have two servings of dinner, then have dessert. But when I serve this amazing no-bake eclair cake, I have a smaller serving for dinner so I can eat more dessert. I have to admit, I also had it for breakfast, but please don’t tell my kids!
