I have a few last minute appetizers for you this week, starting by these yummy Stuffed Cherry tomatoes. They are really easy to make, inexpensive and are perfect to entertain for any occasion. Hey, there’s bacon in there; who doesn’t like bacon???
Ingredients
24 medium to large size cherry tomatoes
1/4 cup of cream cheese at room temperature
1 tablespoon of mayonnaise
2 tablespoons of real crumbled bacon (I use the Kirkland from Costco)
1 green onion finely chopped (keep some for garnish)
Salt and pepper to taste
Directions
Mix together all the ingredient except for the cherry tomatoes.
Cut the top of the cherry tomatoes and empty them. I use the other end of a spoon to do that.
With your fingers, or the other end of a spoon, fill the tomatoes with the cream cheese mixture.
Place in a serving dish.
Sprinkle with chopped green onions.
