Greek Appetizers on a Stick

Do It All Working Mom - Greek Appetizers on a Stick

 

I made these delicious healthy appetizers last week end and they were amazing! I even had to tell my kids to stop eating them so I could taste one. That being said, these are not only the perfect appetizers, but they’re also the perfect lunch or snack for kids, and adults.

I served my delicious Greek Appetizers on a stick on Sunday after getting out of the pool. They were perfect! They’re fresh and so tasty; I bet I’ll be making them a lot this summer.

Ingredients (for 12 skewers)

24 grape tomatoes
24 fresh oregano leaves
24 English cucumber pieces
24 feta cheese cubes
1 tablespoon of olive oil
1/2 teaspoon of lemon juice
1/2 teaspoon of dried oregano

Instructions

In a small bowl, mix together the olive oil, lemon juice and dried oregano. Reserve
Take 12 small skewers and place 2 tomatoes, 2 leaves of fresh oregano, 2 pieces of cucumbers and feta cheese on each alternating the ingredients.
Drizzle the olive oil mixture over the skewers.

And it’s that easy. Takes maximum 15 minutes to make, and everyone will love those healthy skewers. You can add pieces of red onion and black olives if you want, it’s also really good.
