Marinated Grilled Chicken Breasts

This Marinated Grilled Chicken Breasts recipe is fantastic and so easy to prepare. It’s a great summer recipe, weeknight recipe and is also perfect to entertain. You can easily double this recipe.

Marinated Grilled Chicken Breasts 1

You can marinate the chicken breasts for 2 hours, but the longer the better. I like to prepare them in the morning and let them marinate all day, but it’s not always possible. As long as they get 2 hours in the marinade, it’s fine.

Ingredients

4 chicken breasts
1/2 cup of extra virgin olive oil
1 tablespoon of fresh lemon juice
2 cloves of garlic chopped
1 teaspoon of dry dill
1 tablespoon of Italian seasonings
Salt and freshly ground black pepper to taste




Instructions

Place the chicken breasts in a large plastic resealable bag and close the bag.
With a meat tenderizer, pound the chicken breasts while in the plastic bag until they’re about 1″ thick.

Marinated Grilled Chicken Breasts

In a small bowl, stir together all the other ingredients.
Add all the ingredients for the marinade to the chicken.
Remove as much air as you can from the bag, and close it.
With your hands, make sure the pieces of chicken are well covered with the marinade.
Place the plastic bag on a dish in the refrigerator and marinate for at least 2 hours or more if you can.

Place the chicken breasts on a preheated grill, and cook at medium heat for about 10 minutes per side (20 minutes), until the chicken is fully cooked. I use a grill mat.
Let the chicken breasts rest covered with aluminum paper for 5 minutes before serving.
