I usually make a nice and easy supper for my husband and I on Friday nights and we eat when the kids are in bed. Yesterday, I had planned to make a cheese fondue but the roads were bad, because of freezing rain and I did not feel like driving 15 minutes to go to the store. I opened the refrigerator, the pantry, and came up with this 5-minute Pesto Artichoke Pizza. You really need to try it because it’s really awesome!
Ingredients
2 Naan bread or pitas
2 tablespoons of pesto
4 artichoke hearts diced (canned or in oil)
Sliced sun-dried tomatoes in oil (to taste)
1 cup of grated mozzarella cheese
Sliced black olives
Instructions
Preheat the oven to 350.
Place the Naan bread or pitas on a baking sheet lined with aluminum paper.
Spread 1 tablespoon of pesto on each Naan or pita bread.
Top with the chopped artichokes, sundried tomatoes and mozzarella cheese and black olives.
Cook for 10 minutes.
You can add fresh chopped basil as garnish.
It’s that simple and totally yummy! You can serve with a salad or home made fries.
