You can easily prepare this soup for dinner on a weeknight or as a weekend lunch. It’s really easy and quick to prepare. You can easily double this recipe.
Ingredients
1 large onion chopped
3 celery stick chopped
2 large carrots pealed and chopped
5 medium size potatoes pealed and cubed
1/2 cup of real crumbled bacon
2 tablespoons of butter
6 cups of chicken broth
1 teaspoon of dried thyme
1 teaspoon of dried parsley
Salt and pepper to taste
Grated old cheddar cheese for garnish (optional)
Instructions
In a large saucepan, melt the butter at medium heat.
Add the onions and cook for about 4 minutes stirring often. Do not brown the onions.
Add the potatoes, celery, carrots, bacon and cook for 5 minutes stirring often.
Add the chicken broth, thyme, parsley, salt, pepper. Cover and bring to a boil.
Lower the heat and simmer until vegetables are cooked.
Serve in bowls topped with 1 tablespoon of grated old cheddar cheese (optional).
