Pesto and Vegetable Pasta Recipe

This Pesto and Vegetable Pasta Recipe is a healthy and simple meal your family will really enjoy. The first time I made this dish I though I would get a bad reaction from my kids because of all those yummy vegetables, but I got an amazing reaction; they cleaned their plates.

This dish is perfect as a week nigh dinner, as well as to entertain family and friends.

 

Pesto and Vegetable Pasta

Ingredients

4 cups of chopped vegetable (choose your favorites: onion, zucchini, peppers, snow peas, broccoli…)
2 tablespoons of butter
15 cherry or grape tomatoes cut in half
Salt and pepper to taste
1 cup of homemade pesto
Grated Parmesan cheese for garnish

Instructions

Cook a small box of your favorite long pasta as per instructions on box.
While pasta is cooking, melt the butter in a frying pan.
Add the vegetables, except for the tomatoes, and sauté until vegetables are tender (about 5 minutes, reduce heat if necessary).

Pesto and Vegetable Pasta
Add the tomatoes and continue cooking for a few minutes.

Drain the pasta and put back in the pot you cooked it in.
Add the vegetables, pesto, salt and pepper to the pasta and stir.
Serve topped with grated Parmesan cheese.

    I could definitely get into eating that. Of course the pesto would not be homemade —- I know but I cook for just me. I definitely like that I could probably make just one or two servings of it.
