I’m telling you, after making these amazing Grilled Chicken Kabobs, you will never buy them from the store again. They’re tender, juicy, really delicious and so easy to make. Perfect as a weeknight dinner or to entertain. My family loves them, especially the kids. It’s a winner dish!
Ingredients
3 large boneless chicken breast cut in large cubes (24 cubes)
2 red bell peppers cut in large cubes
Half a large red onion cut in large cubes
6 skewers
Marinade
1/2 cup of extra virgin olive oil
1 tablespoon of fresh lemon juice
2 cloves of garlic chopped
1 teaspoon of dry dill
1 tablespoon of Italian seasonings
Salt and freshly ground black pepper to taste
Instructions
Place the chicken cubes in a large plastic resealable bag.
Add all the ingredients for the marinade to the bag.
Remove as much air as you can from the bag, and close it.
With your hands, make sure the marinade is well blended and all the pieces of chicken are covered with the marinade.
Place the plastic bag on a dish in the fridge and marinate for at least 1 hour or more if you can.
Prepare you kabobs alternating the chicken, peppers and onions (4 pieces of each per kabobs).
Place the kabobs on a preheated grill, and cook at medium heat for about 20 minutes turning often (until the chicken is fully cooked).
Let the kabobs rest covered with aluminum paper for 5 minutes before serving.
