Easy Potato Skins

Loaded Potato Skins are so yummy! They’re the perfect party food, game night food, appetizer, and even dinner. Yes, I know I’m pushing it, but serve it with a salad and it’s a meal!

Ingredients

6 medium Russet potatoes washed
1/2 cup of real crumbled bacon or chopped bacon (I use Kirkland Crumbled Bacon)
1 cup of grated mozzarella or cheddar cheese
1 tablespoon of melted butter
Sea salt and freshly ground pepper
2 scallions chopped
Sour cream

Instructions

With a fork or sharp knife, prick the potatoes all around.
Place the potatoes on a plate and microwave them at high for 8 minutes.
Preheat the oven to 400° F.
Slice the potatoes in half.
Scoop out 3/4 of the potato flesh leaving a thin layer on the potato skin.
Brush the potatoes all around with the melted butter and place them on a baking sheet lined with aluminum paper.

Potato Skins
Season with salt and pepper.
Fill each potato with cheese and bacon.

Bake for about 10 minutes until the cheese and is golden brown.
Top each potato with a teaspoon of sour cream and chopped scallions.
