You absolutely must try my Easy Banana Chocolate Chip Muffins. They’re do die for! Moist, and as healthy as chocolate chip muffins can be! My kids can’t get enough! They have them for breakfast and as a snack. They’re perfect for the lunch box. My husband and I enjoy them as well, but we have to be fast!
Ingredients
1/3 cup of extra virgin coconut oil
1/4 cup of honey
6 small packs of Stevia or 1/4 cup of white sugar
1/2 cup of plain Greek yogurt
2 large eggs
3 ripe bananas mashed
1 teaspoon of baking soda
1 teaspoon of vanilla extract
1/4 teaspoon of salt
1 teaspoon of cinnamon
1 1/2 cup of whole wheat flour
1/2 cup of quick oats
1/2 cup of semi-sweet chocolate chips
Non-stick cooking spray
Instructions
Preheat the oven to 350°F
In the bowl of your food processor, add the flour, oats, salt, cinnamon and baking soda.
Stir with a spoon.
Add the other ingredients, except for the chocolate chips.
Blend until smooth.
Add the chocolate chips and blend with a spoon.
Spoon the batter in 12 muffin tins sprayed with non-stick cooking spray.
Cook for 12-15 minutes, or until a toothpick comes out clean when inserted in the middle.
