Easy Baked Chicken Quesadillas

I love to eat Chicken Quesadillas when going out to the restaurant, but it’s not a dish I used to make at home. That’s until I came up with this Easy Baked Chicken Quesadillas recipe. No need to cook them one by one in a skillet. You can bake them at the same time, on a baking sheet in the oven.

Easy baked chicken quesadillas

This is a recipe I will be making again and again. Not only is it easy to make, but my kids really enjoyed the taste and the fact that they could eat with their hands.

Easy baked chicken quesadillas

Ingredients

3 cups of cooked chicken, chopped
1 cup of Tex Mex or Cheddar cheese, grated
2 red bell peppers, chopped
2 onions, chopped
1 teaspoon of cumin
Salt and freshly ground pepper to taste
4 large Tortillas or 8 small tortillas (I use 4 large)
Non-stick cooking spray
3 tablespoon of olive oil

Instructions

Preheat oven to 400° F.
In a frying pan, heat 2 tablespoons of olive oil.
Add the onions and peppers and sauté for 5 minutes at high heat.
Turn the heat down to medium and add the chicken, cumin, salt and pepper.
Cook for another minute.

Easy baked chicken quesadillas
Line 2 baking sheets with aluminum paper and spray them with non-stick cooking spray.
Place 2 large tortillas per baking sheet.
Separate the chicken and vegetables between the four tortillas, adding to only half the tortillas.
Top with grated cheese.

Fold the tortillas in half.
Brush with olive oil.

Place in the oven and cook until golden brown.
Cut in half and serve with salsa and sour cream.

Cook Time: 15 minutes

Total Time: 25 minutes

    What a great, efficient way to make quesadillas for a crowd. Which, even though there are only four of us in our family, is pretty much what I’m feeding these days on account of the “half of us are teenagers” factor. 😉 Stopping by from This Is How We Roll!
