Duck Confit Salad wit Raspberry Vinaigrette

If you like duck and gourmet food, you will love this duck confit salad. It’s the perfect meal starter when entertaining. Your guests will be impressed by this amazing salad. My kids never had duck confit before, and they finished their plate and wanted more.

Ingredients
 
Salad
Mixed greens
2 tablespoons of sliced roasted almonds (how to roast sliced almonds)
2 tablespoons of dried cranberries
1 duck leg confit cooked as per instructions on package
 
Vinaigrette
1 French shallot diced
2 tablespoon of chopped chives
1 tablespoon of honey
6 tablespoons of good quality olive oil
3 tablespoons of raspberry vinegar
Salt and pepper to taste
 
1- Mix together the ingredients for the vinaigrette and reserve in the fridge.
2- Remove the duck meat from the bone and pull the meat apart. Reserve.
3- Place mixed greens in 4 bowls, top with duck meat, almonds, cranberries and vinaigrette to taste.

    I’ve never had any type of duck before, but I’m not opposed to trying it. Especially in this salad. I prefer salads and I prefer vinaigrette dressings, so this is something for me to try.

      I’m sure you would love duck. When I made this recipe it was my kids first time having duck, and they really did clean their plates! 🙂
