Cupcake Strawberry Shortcake

It’s strawberry season here in Quebec and they’re so good. There’s nothing like fresh juicy sugary strawberries. This Cupcake Strawberry Shortcake dessert is perfect for summer. When strawberries are not in season, you can use blueberries or raspberries.

Cupcake Strawberry Shortcake

Ingredients

Cupcakes

2 cups of all purpose flour
1 teaspoon of baking powder
1/2 teaspoon of salt
1 tablespoon of vanilla extract
1 cup of milk
5 egg whites
1 1/2 cup of sugar
1/2 cup of melted unsalted butter

Whipped Cream

2 cups of heavy whipped cream
4 tablespoons of sugar

Garnish

4 cups of sliced strawberries

Instructions

Line 12 muffin tins with cupcake paper liners.
Preheat oven to 350 degrees F.
In a small bowl, stir together the flower, baking powder and salt. Reserve.
With a hand mixer mix together butter and sugar at low speed for about 1 minute.
Add milk, vanilla, egg and mix at low speed until blended.
Slowly add the dry ingredients and mix at low speed until combined.
Divide the batter between the 12 cupcake liners.
Cook for about 17 minutes, or until toothpick come out clean when inserted in the middle of cupcake.
Let the cupcakes cool down completely.
Remove liners.
Slice the cupcakes in 3 parts.
In a plate place the bottom piece of the cupcake, top with whipped cream and strawberries. Alternate the cupcake, whipped cream and strawberries for the 3 layers.
Serve immediately.

Whipped Cream

Beat the cream at high speed until soft peaks forms.
Add the sugar.
Beat again until soft peaks return.
