Cucumber Salad

Despite all the great recipes I post on this blog; I sometimes run out of idea. So once a week, when I go to the office, I ask my coworkers for some inspiration. This Cucumber Salad idea was given to me by  a coworker, and it’s really good. My family loved it!

Cucumber Salad

 If you have a garden with lots of cucumbers, or are just looking for a great new side dish; you have to give this recipe a try. I will certainly make it again and again.

Ingredients

1 to 2 cucumbers depending on the size, pealed and sliced. I use 1 English cucumber or 2 cucumbers from my garden.
White vinegar (enough to cover the cucumbers)
2 tablespoons of coarse salt
Freshly ground pepper
3 tablespoons of olive oil
2 green onions chopped
2 tablespoons of fresh parsley chopped

Instructions

Place your cucumbers in a medium size bowl.
Cover the cucumbers with vinegar and add the coarse salt.
Cover the bowl with plastic wrap and place in the refrigerator for 3 hours.
Drain the vinegar, add the remaining ingredients to the cucumbers. Stir and serve, or keep in the refrigerator until ready to serve.

Hope you enjoy this delicious and fresh cucumber salad. Makes a great summer side dish.
