Chicken Parmesan

Do It All Working Mom - Chicken Parmesan

Today I’m sharing with you a great Italian recipe: Chicken Parmesan (or chicken parmigianna). My recipe is simple and easy. This is comfort food, your family will love.

 

Ingredients

2 chicken breast cut in half thickness-wise
1 cup of bolognese sauce (see recipe HERE)
1/2 cup of plain bread crumbs
1 teaspoon of dried rosemary
1 teaspoon of Italian seasoning
Salt and freshly ground pepper to taste
1 teaspoons of olive oil
1 teaspoon of butter
1/2 cup of grated mozzarella cheese
1/2 cup of grated parmesan cheese

 

Directions

– Preheat oven to 400 F.
– In a shallow bowl, mix together breadcrumbs, rosemary and Italian seasoning.
– Cover each pieces of chicken with the breadcrumb mixture.

– Season with salt and pepper.
– Heat butter and olive oil in a non-stick frying pan.
– Brown chicken on both side (just to brown not cook the chicken).

– Place the browned chicken breasts in a 9×13 baking dish, previously sprayed with Pam cooking spray.
– Spread the bolognese sauce on top of each chicken breasts.
– Spread the mozzarella and parmesan cheese over the bolognese sauce.
-Cook for 15 minutes at 400 F.
– Remove from oven and lest chicken breasts rest for 5 minutes.
– Serve with butter pasta or noodles.
