Apple Oatmeal Muffins

There’s nothing like a delicious homemade muffin for breakfast or as a snack. These Apple Oatmeal Muffins are easy to prepare and delicious. When you have kids, it’s a fun and easy recipe to make with them. It’s also great to add to their lunch box.

I love a tasty muffin with a cup of coffee in the morning, or as a snack with a nice cup of tea in the evening. It’s so good and comforting.

Ingredients

2 large eggs
1 cup of sugar
1 cup of melted butter
1/2 cup of milk
1 teaspoon of salt
1 teaspoon of baking soda
1 cup of apples pealed cut in small cubes
1 3/4 cup of oatmeal
1 1/2 cup of flour
1/4 teaspoon of nutmeg
1 teaspoon of cinnamon

 

Instructions

Preheat the oven to 350 degrees F.
Line muffins tins with 20 muffin liners.
In a medium bowl stir together the flower, oatmeal, salt, baking soda, nutmeg and cinnamon. 
In a large bowl, beat together the eggs, milk, sugar and butter until blended.
Add the dry ingredient to the egg mixture and mix just until blended.
Add the apples and stir with a spoon.
Add 2 tablespoons of muffin batter per muffin liner.
Cook for 15 to 20 minutes or until a toothpick comes out clean when inserted in the middle.
Makes 20 muffins
