Creamy Celery Root and Apple Soup

We love soup in this house, especially this time of year. I have a lot of great soup recipes like my Cream of Leek Soup, my Vegetable Soup, my Split Pea Soup or Creamy Beet Soup. They’re all delicious and easy to prepare, but I wanted to try something different. Well this Creamy Celery Root and Apple Soup is simply amazing! It’s so tasty; totally worth the try.

Creamy celery root and apple soup

Ingredients

1 large potato pealed and cut in large cubes
1 large celery root pealed and cut in large cubes
2 apples pealed and cubed
2 leeks (white part only) finely chopped
2 tablespoons of butter
1 tablespoon of olive oil
900 ml of chicken broth
1 cup of 15% cooking cream
salt and pepper to taste

Directions

In a large sauce pan, heat the butter and olive oil at medium high heat.
Add the potatos, celery root, apples, leaks and cook for 5 minutes.
Creamy celery root and apple soup
Add the chicken broth, salt and pepper and reduce heat.
Let simmer for about 30 minutes or until potatoes and celery root are tender.
Remove from heat, and puree with a hand mixer or blender.
Place back on burner, add the cream and cook until the soup is warm.

This Creamy Celery Root and Apple Soup is perfect served with fresh bread, panini, croque-monsieurs or a delicious sandwich. It did not last long at our house. My husband and kids loved it!
