Easy Chewy Oatmeal Cookies

Oatmeal Cookies have been my favorite since I was a kid. I remember the delicious large cookies I used to buy at the school cafeteria. I savored every bite. Well now, I make my own delicious easy chewy Oatmeal Cookies.

Ingredients

1 cup of butter at room temperature
1 cup of light brown sugar
1 cup of granulated sugar
2 large eggs
1/2 teaspoon of salt
1/2 teaspoon of baking powder
1 teaspoon of baking soda
1 tablespoon of pure vanilla extract
2 cups of all purpose flour
2 cups of quick cooking oats
1 teaspoon of cinnamon
1 teaspoon of nutmeg

Instructions

Preheat the oven to 350 degrees F.
In a large bowl, beat the butter, brown sugar and granulated sugar until light and fluffy (about 5 min.).
Add the eggs and pure vanilla extract and stir until blended.
In another bowl combine the dry ingredients: flour, oatmeal, baking soda, baking powder, salt, cinnamon and nutmeg.
Add the dry ingredients to the butter mixture and stir by hand until blended. Do not over mix.
Line a baking sheet with parchment paper.
Shape the dough in balls of about 2″ diameter and place on the prepared baking sheet 6 at a time.
Flatten the balls of dough by pressing with your hands.
Oatmeal Cookies
Bake in preheated oven for about 8 minutes, until the edge is golden brown.
Cool down completely before placing the cookies in an airtight container.
Makes 16 larges cookies.

    I’m a fan of raisin oatmeal cookies. Have you ever added them to your recipe? if so, do they still remain chewy. I’ve been searching for the perfect oatmeal raisin cookie but still haven’t found one. Saving your recipe to try.

      No I haven’t, my kids don’t like raisins in cookies or muffins. I’m sure they would be delicious if you added some though.

    I have made these so many times. I usually 1/ the recipe and perfect. For special occasions I make them smaller, let them cool and add ice cream to the center and stack the two. Delicious. I always make these with my now 3 year old granddaughter who loves to bake with Grandma. GREAT recipe..The best

    Please answer! Why do you have Baking soda on here but not actually in the directions?

      I does say in the instructions: In another bowl combine the dry ingredients: flour, oatmeal, baking soda, baking powder, salt, cinnamon and nutmeg.

    why does your instruction say baking powder when it is not in the list of ingredients?

    sorry I might have made a mistake in my last question – in your instruction is says baking powder and baking soda, but you only have baking powder listed in the ingredients – there is no measurement for the baking soda – was this in error and you don’t need baking soda?

    I have made a batch and didn’t have an issue, but I thought they were a little too sweet so I was going to cut the sugar by half – I’m hoping they will just be a little less sweet – has anyone done this? what were the results? Otherwise they were delicious!!

    I also want to make sure I don’t need baking soda since it is not listed in the ingredients.

    I’m also going to add raisins and walnuts to this new batch – hopefully no issues 🙂

      I’ve updated the recipe. My mistake sorry! You should add 1 teaspoon of baking soda to the recipe. I’m glad you liked it. I’m sure it will be delicious with raisins but my kids don’t like raisins or walnuts. 😉
