These Thin and Chewy Peanut Butter Cookies are fantastic! They’re really easy to prepare; in fact they’re the perfect dessert recipe to make with kids. The only problem with these Peanut Butter Cookies, is that you can’t eat just one!
To prepare this recipe, I use my Kitchen Aid Stand Mixer.
Ingredients
2 eggs
1 cup of unsalted butter at room temperature
1 cup of granulated white sugar
1 cup of brown sugar
1 cup of peanut butter
2 cups of flour
2 teaspoons of baking soda
Instructions
With a mixer, mix the butter, white sugar and brown sugar for about 1 minutes at medium speed.
Add the peanut butter and mix for another minutes.
Add the eggs and mix until blended.
In a medium bowl stir the flour with the baking soda and add to the butter mixture mixing at low speed just until blended.
Place to cookie dough in the refrigerator for 10 minutes to let the dough cool a little.
In the mean time, preheat the oven to 350 degrees F. and prepare one or two cookie sheets with parchment paper. I use reusable cookie mats.
Form balls of cookie dough of about 1 tablespoon. Place 12 balls of cookie dough per prepared cookie sheet.
Cook for about 9-10 minutes or until golden brown.
Place the dough in the refrigerator between each batch so it stays cool.
Let the cookies cool on the cookie sheet for a few minutes then transfer to a cooling rack and let them cool completely.
Makes about 4 dozen cookies.
