Lemon Poppy Seed Muffins are my kids favourite. I make them often, they’re so delicious! Try making them, they’ll become your family’s favourite too.
Ingredients
1- Preheat oven to 350.
2- Line muffin tins with paper liners.
3- Mix together flour, baking powder, salt and baking soda in a bowl.
4- In another bowl, whisk sour cream, buttermilk and lemon juice to blend.
5- Using the electric mixer, beat sugar, butter and lemon zest in a large bowl.
6- Add eggs and beat well until mixture is light and fluffy.
7- Mix in dry ingredients and sour cream mixture in alternation. Mix just until blended.
8- Stir in poppy seeds and spoon batter into muffin tins.
9- Bake for about 20 minutes or until tester inserted into center comes out clean.
10- Let muffins cool.
11- While muffins are cooling, prepare icing by mixing together the butter, lemon juice and icing sugar. You can add food coloring if you want.
12- Spread a generous amount of icing on top of muffins.
Makes 12 large muffins.

- 2 tablespoon of fresh lemon juice
- 1 cup of granulated sugar
- 1/2 cup of unsalted butter at room temperature
- 1 Tablespoon of grated lemon zest
- 2 large eggs
- 2 teaspoon of poppy seeds
- 1/2 cup of butter at room temperature
- The juice of 1 lemon
- 3 cups of icing sugar
