Souvlaki Pitas are one of my family’s favorite meal. They’re the perfect weeknight dinner since they’re really easy and quick to prepare, but are also really tasty and full of great ingredients.
What I do is; as soon as I get home with the kids, I cut my chicken breasts in cubes and place them in a plastic resealable bag with the marinade. While the chicken marinates, we do homework, and then the kids set the table while I cook the chicken and prepare the Souvlaki Pitas. I usually serve our Souvlaki Pitas with white rice.
Ingredients
2 large boneless chicken breasts cut in cubes
4 pitas
Tzatziki Sauce (check out my easy homemade Tzatziki Sauce Recipe)
1 large tomato chopped
1 onion chopped
Leaves of Romaine or Boston lettuce
Marinade
1/2 cup of extra virgin olive oil
1 tablespoon of fresh lemon juice
2 cloves of garlic chopped
1 teaspoon of dry dill
1 tablespoon of Italian seasonings
Salt and freshly ground black pepper to taste
Instruction
Place the cubes of chicken in a large plastic resealable bag.
Add the ingredients for the marinade to the chicken.
Seal the bag and using your fingers rub the chicken with the marinade.
Place the chicken in the refrigerator and let marinate for at least 1 hour.
After an hour, add the chicken to a preheated frying pan and cook at medium heat until the chicken is fully cooked (about 10 minutes).
Serve on a pita, with lettuce, chopped onions, chopped tomatoes and Tzatziki Sauce.

Notes
1:25 minutes includes 1 hour for the chicken to marinate.
