We purchased 4 hens in the spring and we have more eggs then we can eat in a week. I do give some away to family and friends, but coming up with a recipe that uses our fresh eggs is great. You will love this Easy Frittata recipe. It’s easy to prepare and really tasty. Full of healthy and delicious ingredients.
So if you love eggs like we do, this Easy Frittata Recipe is totally worth the try. We eat Frittata for dinner, but you can have it for breakfast, lunch or brunch. It would also be a perfect dish for Easter.
Ingredients
1 tablespoon of butter
1 tomato diced with seeds removed
10 eggs
1/2 cup of milk
1 cup of grated mozzarella or cheddar cheese
1/2 cup of chopped cooked bacon (I use real crumbled bacon from Costco)
1 medium onion chopped
1 can of whole white potatoes diced
Salt and pepper to taste
Fresh parsley chopped for garnish

Instructions
In a cast iron skillet or a large frying pan, melt the butter at medium heat.
Add the potatoes, onions, salt and pepper and sauté for about 5 minutes, or until potatoes are golden brown.
While the potatoes are cooking, lightly beat the eggs with the milk.
When potatoes are ready, add the bacon, the egg mixture and the tomatoes on top.
Cover and cook for 5 minutes.
Remove from the heat and add the grated cheese.
Place in the oven at broil for about 5 minutes, or until the cheese is golden brown.
Add the chopped parsley for garnish
